做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
