做法:洗净宰好鲫鱼(yú ),洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜块在(zài )锅上擦一遍(biàn ),放两勺油(yóu ),待油六成热(rè )下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小火(huǒ )煲(bāo )一(yī )个半小时,下盐(yán )调味即可品尝。
