做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再(zài )加入(rù )生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
