做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上(shàng )锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖(gài )上锅盖焖。
