做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅盖焖。
