做(zuò )法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待油(yóu )六成热下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下(xià )盐调味即可品(pǐn )尝。 -
