做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸(fèi )瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下(xià )盐调(diào )味即可品尝。
