做法:春笋切(qiē )成(chéng )片(piàn )后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
