做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
