做法:洗净(jìng )宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏米。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时,下(xià )盐调味即可(kě )品尝。
