做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈(chén )皮(pí )泡(pào )软,拍(pāi )裂一(yī )小(xiǎo )块姜,热(rè )锅(guō ),用姜块在锅上擦一遍(biàn ),放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中小火煲(bāo )一个半(bàn )小时,下盐(yán )调味(wèi )即可品尝。
