做法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮(huái )山和(hé )薏米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅,用姜块在(zài )锅(guō )上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的(de )清水,放入煎(jiān )煮(zhǔ )好的(de )鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一个(gè )半(bàn )小时,下(xià )盐调味即可品尝。
