做(zuò )法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的(de )时(shí )候加(jiā )入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
