做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
