做法:春(chūn )笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的(de )时(shí )候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
