做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
