做法:春笋切(qiē )成片(piàn )后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
