做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。 -
