做法:洗净宰好鲫鱼,洗净淮山(shān )和薏(yì )米。用清水把陈皮(pí )泡软,拍(pāi )裂(liè )一小块姜,热(rè )锅(guō ),用姜(jiāng )块在锅上擦一遍,放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸瓦(wǎ )煲里(lǐ )的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
