做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜块在锅上擦一(yī )遍,放(fàng )两勺油,待油六成热(rè )下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲(bāo )里的(de )清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其(qí )他(tā )材料,武火煮沸,转中小(xiǎo )火煲一(yī )个(gè )半小时,下盐调味即可品尝。
