做法:春笋切成片(piàn )后(hòu )加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油(yóu ),放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
