做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清(qīng )水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
