做法:洗净宰好鲫(jì )鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小块(kuài )姜,热(rè )锅(guō ),用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼(yú )和其他材料,武火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲一个(gè )半(bàn )小时,下盐调味即可品尝。
