做法(fǎ ):春笋切成片后加少许盐(yán )捞出后(hòu )用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成(chéng )段。锅烧(shāo )热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
