做法(fǎ ):洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮(pí )泡软,拍裂一小块姜(jiāng ),热锅(guō ),用姜块在(zài )锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小时,下盐调味即可品尝。
