做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清(qīng )水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转(zhuǎn )中小火(huǒ )煲(bāo )一个半小(xiǎo )时,下盐调(diào )味即可品(pǐn )尝。 -
