做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮(pí )泡(pào )软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在锅上擦一遍,放(fàng )两勺油(yóu ),待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲一(yī )个半小(xiǎo )时,下盐调味即(jí )可品尝(cháng )。
