做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到(dào )水(shuǐ )快熬干的(de )时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
