做法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮开(kāi )后(hòu )转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
