做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一(yī )个半小时,下盐(yán )调(diào )味即可品尝。
