做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半(bàn )掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
