做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖(gài )焖。
