做法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖(gài )上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖焖。
