做法(fǎ ):洗(xǐ )净宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待(dài )油(yóu )六成(chéng )热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火(huǒ )煲一(yī )个半小时(shí ),下盐调味即可品尝。
