做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖(mèn )。
