做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放(fàng )两勺油,待油六成热(rè )下(xià )鱼,煎至微黄。煮沸(fèi )瓦煲里的清(qīng )水,放(fàng )入煎(jiān )煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一个(gè )半小(xiǎo )时(shí ),下盐(yán )调味即可品尝。
