做法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其他材(cái )料(liào ),武(wǔ )火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可品尝。 -
