做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮(huái )山和(hé )薏(yì )米。用清水把(bǎ )陈皮泡(pào )软,拍裂一小块(kuài )姜,热锅,用(yòng )姜块在锅上擦一遍,放(fàng )两勺油,待(dài )油六成热(rè )下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其他材料,武火(huǒ )煮沸,转中小火煲一(yī )个半小时,下盐(yán )调味即可品尝。 -
