做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放入(rù )煎煮好的鲫鱼(yú )和其他(tā )材料,武(wǔ )火煮(zhǔ )沸,转(zhuǎn )中(zhōng )小火(huǒ )煲一(yī )个半小时(shí ),下盐调味(wèi )即可品尝。
