做法:春笋(sǔn )切成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖(mèn )。
