做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
