做(zuò )法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
