做(zuò )法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬(áo )干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅盖焖。
