做法:春笋切成片后加少许盐(yán )捞(lāo )出后用(yòng )清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
