做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上擦一遍,放两勺油,待(dài )油六成热下鱼(yú ),煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎(jiān )煮好的(de )鲫鱼(yú )和其(qí )他(tā )材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐(yán )调味即可品尝。
