做法:春笋切成片(piàn )后加少许(xǔ )盐捞(lāo )出(chū )后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖(gài )焖。
