做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
