做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一(yī )小块姜(jiāng ),热锅,用姜(jiāng )块在锅上(shàng )擦(cā )一遍,放两勺油,待(dài )油(yóu )六成热下(xià )鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其他材料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
