做法:春笋切(qiē )成片后(hòu )加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁(zhī )时(shí )盖(gài )上锅盖焖。
