做(zuò )法:春笋切成片后加(jiā )少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
